Chili Chestnut, Sweet Apricot, & Whipped Feta Toasts

This is a delightful breakfast or light lunch option, full of gut-healthy ingredients and a fair list of healthy polyphenols too.
You will need
- ½ baguette, sliced into ½” slices; if making your own, feel free to use our Delicious Quinoa Avocado Bread recipe. If buying shop-bought, a sourdough baguette will likely be the healthiest option, and tasty too.
- 4 oz feta cheese; if you are vegan, a plant-based version will work in culinary terms, but will have a different (less gut-healthy) nutritional profile, as plant-based cheeses generally use a lot of coconut oil and potato starch, and are not actually fermented.
- 1 tbsp yogurt; your preference what kind; live-cultured with minimal additives is of course best—and this time, plant-based is also just as good, healthwise, since they are fermented and contain more or less the same beneficial bacteria, and have a good macro profile too.
- 4 oz precooked chestnuts, finely chopped
- 6 dried apricots, finely chopped
- ¼ bulb garlic, grated
- 2 tsp harissa paste
- 1 tsp black pepper, coarse ground
- ¼ tsp MSG or ½ tsp low-sodium salt
- Extra virgin olive oil, for frying
- Optional garnish: finely chopped chives
Method
(we suggest you read everything at least once before doing anything)
1) Combine the feta and yogurt in a small, high-speed blender and process into a smooth purée. If it isn’t working, add 1 tbsp kettle-hot water and try again.
2) Heat the oil in a skillet over a medium heat; add the garlic and when it starts to turn golden, add the chestnuts and harissa, as well as the black pepper and MSG/salt. Stir for about 2 minutes, and then stir in the apricots and take it off the heat.
3) Toast the baguette slices under the grill. If you’re feeling bold about the multitasking, you can start this while still doing the previous step, for optimal timing. If not, simply doing it in the order presented is fine.
4) Assemble: spread the whipped feta over the toast; add the apricot-chestnut mixture, followed by the finely chopped chives if using, and serve immediately:

The techniques are things like the RAIN technique above, so if you liked that, you’ll love this. Being a book rather than a newsletter, it also takes the liberty of going into much more detail—hence the 200 pages for 23 techniques. Unlike many books, it’s not packed in fluff either. It’s that perfect combination of “to the point” and “very readable”.

Sunflower Corn Burger

Burgers are rarely a health food, but in this case, everything in the patty is healthy, and it’s packed with protein, fiber, and healthy fats.
You will need
- 1 can chickpeas
- ¾ cup frozen corn
- ½ cup chopped fresh parsley
- ⅓ cup sunflower seeds
- ⅓ cup cornichon pickles
- ⅓ cup wholegrain bread crumbs (gluten-free, if desired/required)
- ¼ bulb garlic (or more if you want a stronger flavor)
- 1 tbsp extra virgin olive oil, plus more for frying
- 1 tbsp nutritional yeast (or 1 tsp yeast extract)
- 2 tsp ground cumin
- 2 tsp red pepper flakes
- 2 tsp black pepper, coarse ground
- 1 tsp Dijon mustard
- To serve: 4 burger buns; these are not usually healthy, so making your own is best, but if you don’t have the means/time, then getting similarly shaped wholegrain bread buns works just fine.
- Optional: your preferred burger toppings, e.g. greenery, red onion, tomato slices, avocado, jalapeños, whatever does it for you
Note: there is no need to add salt; there is enough already in the pickles.
Method
(we suggest you read everything at least once before doing anything)
1) Combine all the ingredients except the buns (and any optional toppings) in a food processor, pulsing a few times for a coarse texture (not a purée).
2) Shape the mixture into 4 burger patties, and let them chill in the fridge for at least 30 minutes.
3) Heat a skillet over a medium-high heat with some olive oil, and fry the burgers on both sides until they develop a nice golden crust; this will probably take about 4 minutes per side.
4) Assemble in the buns with any toppings you want, and serve:

That’s a little broader than we usually go for, given the amount of space we have, but let’s give it a go!
Macronutrients, or “macros”, are the nutrients that we typically measure in grams rather than milligrams or micrograms, and are:
- Carbohydrates
- …and what kinds, of which usually the focus is on how much is sugars as opposed to more complex carbs that take longer to break down. See also: Should You Go Light Or Heavy On Carbs?
- …and of the sugars, the interested may further categorize them into sucrose, fructose, etc. See also: Which Sugars Are Healthier, And Which Are Just The Same?
- Proteins
- …of which, the amino acid make-up is generally considered a matter of micronutrients. See also: Protein: How Much Do We Need, Really?
- Fats
- …and what kinds, i.e. monounsaturated vs polyunsaturated vs saturated. See also: Saturated Fat: What’s The Truth?
- …and then the interested may further categorize them for their fatty acids / triglycerides profile, etc. See also: What Omega-3 Fatty Acids Really Do For Us
- Fiber
- …which often gets ignored by people counting macros, as “stuff that doesn’t do anything”, despite it in fact being very important for health. See also: Why You’re Probably Not Getting Enough Fiber (And How To Fix It)
- Water
- …which again tends to get disregarded but is very arguably a critical macronutrient. See also: Busting The Myth of “Eight Glasses Of Water A Day”
In terms of how much we need of each, you can read more in the above-linked articles, but:
- General scientific consensus is we need plenty of fiber (30 or 40g per day is good) and water (highly dependent on climate and activity), and there’s a clear minimum requisite for protein (usually put at around 1g of protein per day per 1kg of body weight).
- There is vigorous debate in the general health community about what the best ratio of carbs to fat is.
The reality is that humans are quite an adaptable species, and while we absolutely do need at least some of both (carbohydrates and fats), we can play around with the ratios quite a bit, provided we don’t get too extreme about it.
While some influence is social and often centered around weight loss (see for example keto which seeks to minimize carbs, and volumetrics, which seeks maximise volume-to-calorie ratio, which de facto tends to minimize fats), some of what drives us to lean one way or the other will be genetics, too—dependent on what our ancestors ate more or less of.
Writer’s example: my ancestors could not grow much grain (or crops in general) where they were, so they got more energy from such foods as whale and seal fat (with protein coming more from reindeer). Now, biology is not destiny, and I personally enjoy a vegan diet, but my genes are probably why I am driven to get most of my daily calories from fat (of which, a lot of fatty nuts (don’t tell almonds, but I prefer walnuts and cashews) and healthy oils such as olive oil, avocado oil, and coconut oil).
However! About that adaptability. Provided we make changes slowly, we can usually adjust our diet to whatever we want it to be, including whether we get our energy more from carbs or fats. The reason we need to make changes slowly is because our gut needs time to adjust. For example, if your vegan writer here were to eat her ancestrally-favored foods now, I’d be very ill, because my gut microbiome has no idea what to do with animal products anymore, no matter what genes I have. In contrast, if an enthusiastic enjoyer of a meat-heavy diet were to switch to my fiber-rich diet overnight, they’d be very ill.
So: follow your natural inclinations, make any desired changes slowly, and if in doubt, it’s hard to go wrong with enjoying carbs and fats in moderation.

That is a good question! The simple answer is “no” (but keep reading, because all is not lost)
There’s no way (that we yet know of) to proof the kidneys against the stimulating effect of caffeine. This is especially relevant because part of caffeine’s stimulating effect is noradrenergic, and that “ren” in the middle there? It’s about the kidneys. This is just because the adrenal gland is situated next to them (actually, it’s pretty much sitting on top of them), hence the name, but it does mean that the kidneys are about the hardest thing in the body to have not effected by caffeine.
However! The effects of caffeine in general can be softened a little with l-theanine (found in tea, or it can be taken as a supplement). It doesn’t stop it from working, but it makes the curve of the effect a little gentler, and so it can reduce some unwanted side effects.

The signs
With the caveat that this is a list of potential warning signs, not a diagnostic tool, the 10 signs are:
- Memory loss: e.g. forgetting important or well-learned information, such as one’s home address
- Challenges in planning or solving problems: e.g. difficulty with tasks such as paying bills (for organizational rather than financial reasons), following recipes, or managing medications
- Difficulty completing familiar tasks: e.g. trouble remembering rules of a familiar game, or directions to a familiar place
- Confusion with place or time: e.g. forgetting where one is, or making mistakes with the date, season, or other time-related details. Note that anyone can be momentarily unsure of today’s date, but if someone thinks it’s 1995, probably something wrong is not quite right. Similarly, being wrong about who is the current national leader is often used as a test, too—assuming countries with enough political stability to not have five different national leaders in the past four years, including one who did not outlast a lettuce *side-eyeing the UK*
- Trouble understanding visual images and spatial relationships: e.g. increased clumsiness, difficulty parking, or bumping into objects
- New problems with speaking or writing: e.g. losing track in conversations, or struggling to find the right words
- Misplacing things: e.g. losing items and being unable to retrace one’s steps to find them
- Decreased or poor judgment: e.g. falling for scams, giving out too much information or money without investigating appropriately first
- Withdrawal from social activities or hobbies: e.g. losing interest in activities one used to enjoy or avoiding social interactions
- Changes in mood and personality: e.g. increased irritability, anxiety, or other noticeable changes in behavior and personality

This is a book that took “whole foods plant-based diet” and ran with it.
“Whole foods”, you say? Carleigh Bodrug has you covered in this guide to using pretty much everything.
One of the greatest strengths of the book is its “Got this? Make that” section, for using up those odds and ends that you’d normally toss.
You may be thinking: “ok, but if to use this unusual ingredient I have to buy four other ingredients to make this recipe, generating waste from those other ingredients, then this was a bad idea”, but fear not.
Bodrug covers that too, and in many cases leftover “would get wasted” ingredients can get turned into stuff that can go into longer-term storage one way or another, to use at leisure.
Which also means that on the day “there’s nothing in the house to eat” and you don’t want to go grocery-shopping, or if some global disaster causes the supply lines to fail and the stores become empty (that could never happen though, right?), you will have the mystical ability to conjure a good meal out of assorted odds and ends that you stored because of this book.
Bottom line: if you love food and hate food waste, this is a great book for you.
