Butter vs Margarine
Yesterday, we asked you for your (health-related) opinion on butter vs margarine, and got the above-depicted, below-described, set of responses:
- A little over 60% said butter is a health food and margarine is basically plastic with trans fats
- A little over 20% said that both are woeful and it’s better to avoid both
- A little over 10% said that margarine is a lighter option, and butter is a fast track to cardiovascular disease.
Comments included (we will summarize/paraphrase, for space):
- “…in moderation, though”
- “I’m vegan so I use vegan butter but I know it’s not great, so I use it sparingly”
- “butter is healthy if and only if it’s grass-fed”
- “margarine has unpronounceable ingredients”
To address those quickly:
- “…in moderation” is a stipulation with which one can rarely go too far wrong
- Same! Speaking for myself (your writer here, hi) and not for the company
- Grass-fed is indeed better; alas that so little of it is grass-fed, in the US!
- Butter contains eicosatrienoic acid, linolelaidic acid, and more*. Sometimes big words don’t mean that something is worse for the health, though!
So, what does the science say?
Butter is a health food: True or False?
True or False, depending on amount! Moderation is definitely key, but we’ll return to that (and why not to have more than a small amount of butter) later. But it is a rich source of many nutrients, iff it’s grass-fed, anyway.
The nutritional profile of something isn’t a thing that’s too contentious, so rather than take too much time on it, in this case we’ll point you back up to the scientific paper we linked above, or if you prefer a pop-science rendering, here’s a nice quick rundown:

Margarine is basically plastic with trans fats: True or False?
False and usually False now, respectively, contingently.
On the first part: chemically, it’s simply not “basically plastic” and everything in it is digestible
On the second part: it depends on the margarine, and here’s where it pays to read labels. Historically, margarines all used to be high in trans fats (which are indeed woeful for the health). Nowadays, since trans fats have such a (well-earned) bad press, there are increasingly many margarines with low (or no) trans fats, and depending on your country, it may be that all margarines no longer have such:

So this is one where the science is clear (trans fats are unequivocally bad), but the consumer information is not always (it may be necessary to read labels, to know whether a margarine is conforming to the new guidelines).
Butter is a fast track to cardiovascular disease: True or False?
True or False depending on amount. In moderation, predictably it’s not a big deal.
But for example, the World Health Organization recommends that saturated fats (of which butter is a generous source) make up no more than 10% of our calorie intake:

So if you have a 2000 kcal daily intake, that would mean consuming not more than 200 kcal from butter, which is approximately two tablespoons.

Healthy Butternut Macaroni Cheese

A comfort food classic, healthy and plant-based, without skimping on the comfort.
You will need
- ½ butternut squash, peeled and cut into small pieces (if buying ready-chopped, this should be about 1 lb)
- 1 onion, chopped
- ¼ bulb garlic
- 2 tbsp extra virgin olive oil
- 12 oz (or thereabouts) wholegrain macaroni, or similar pasta shape (even penne works fine—which is good, as it’s often easier to buy wholegrain penne than wholegrain macaroni) (substitute with a gluten-free pasta such as buckwheat pasta, if avoiding gluten)
- 6 oz (or thereabouts) cashews, soaked in hot water for at least 15 minutes (but longer is better)
- ½ cup milk (your preference what kind; we recommend hazelnut for its mellow nutty flavor)
- 3 tbsp nutritional yeast
- Juice of ½ lemon
- 2 tsp black pepper, coarse ground
- ½ tsp MSG, or 1 tsp low-sodium salt
- Optional: smoked paprika, to serve
Note: if you are allergic to nuts, please accept our apologies that there’s no substitution available in this one. Simply put, removing the cashews would mean changing most of the rest of the recipe to compensate, so there’s no easy “or substitute with…” that we can mention. We’ll have to find/develop a good healthy plant-based no-nuts recipe for you at a later date.
Method
(we suggest you read everything at least once before doing anything)
1) Preheat the oven to 400℉ / 200℃.
2) Combine the butternut squash, onion, and garlic with the olive oil, in a large roasting tin, tossing thoroughly to ensure an even coat of oil. Roast them for about 25 minutes until soft.
3) Cook the macaroni while you wait (this should take about 10 minutes or so in salted water), drain, and rinse thoroughly in cold water, before setting aside. This cooling increases the pasta’s resistant starch content (that’s good, for your gut and for your blood sugars, and thus also for your heart and brain), and it will maintain this benefit even when we reheat it later.
4) Drain the cashews, and tip them into a high-speed blender with the milk, and process until smooth. Add the roasted vegetables and the remaining ingredients apart from the pasta, and continue to process until again smooth. You can add a little more milk if you need to, but go easy with it.
5) Heat the sauce (that you just made in the food processor) gently in a saucepan, and refresh the pasta by pouring a kettle of boiling water through it in a colander.
6) Optional: combine the pasta and sauce in an ovenproof dish or cast iron pan, and give it a few minutes under the hottest grill (or browning iron, if you have such) your oven can muster. Alternatively, use a culinary blowtorch, if you have one.
7) Serve; and if you didn’t do the optional step above, this means combining the pasta and sauce. You can also dust the top with some extra seasonings if you like. Smoked paprika works well for this.

Debunking the vitamin D fad

Throughout the pandemic, many unproven miracle COVID-19 “cures” emerged, and vitamin D claims have been one of the most persistent. This is not new for the vitamin. It’s been touted in recent decades as a way to “boost” the immune system, improve overall health, prevent a host of diseases, and allegedly even substitute for vaccines.
But as with many internet-popular health “remedies,” the reality is far less flashy and far more nuanced.
What is vitamin D, and why is it important?
Vitamin D is a nutrient that helps the body absorb calcium, which is essential for bone health. In the sunlight, your skin naturally produces vitamin D that is then stored in fat cells until it is used.
The skin pigment melanin absorbs the UV rays necessary for vitamin D production, meaning that more highly pigmented or darker skin produces less vitamin D than lighter skin with the same amount of sun exposure. Thus, people with darker skin are at higher risk of vitamin D deficiency.
Most of our vitamin D comes from the sun. An additional 10 percent to 20 percent of our vitamin D comes from foods like fatty fish (such as salmon), eggs, and mushrooms. Vitamin D supplements are another source of the nutrient for people who are unable to get enough from sun exposure and diet.
Vitamin D deficiency is real, but there’s no epidemic
Some people who promote vitamin D supplements claim that vitamin D deficiency is an epidemic causing widespread health issues. There is little evidence to support this claim. A 2022 analysis of 2001-2018 data found that 2.6 percent of people in the U.S. had severe vitamin D deficiency.
Severe vitamin D deficiency can cause serious health issues, such as muscle weakness, bone loss in adults, and rickets (weak bones) in children. Some people are at higher risk for the deficiency, including individuals with certain disorders that prevent the body from absorbing or processing vitamin D or those with a family history of vitamin D deficiency.
Black Americans have the highest rates of severe vitamin D deficiency at nearly 12 percent. Severe vitamin D deficiency is also slightly higher in the U.S. during the winter when people get less sun exposure. Rates of moderate vitamin D deficiency are higher at 22 percent overall and are highest among Black Americans (49 percent) and Mexican Americans (35 percent).
Although severe vitamin D deficiency exists in the U.S., it is far from common. Most tellingly, conditions that are directly linked to vitamin D deficiency are not widespread. There is no epidemic of rickets, for example, or bone loss in adults.
There’s little evidence that vitamin D supplements improve overall health
Vitamin D supplements have clear, proven positive effects for people with vitamin D deficiency. Other health benefits of vitamin D supplements are less certain.
There is some evidence that the supplement may reduce the risk of fracture in adults with osteoporosis, a condition that causes weak, fragile bones. However, the benefit appears to be limited to people who have low vitamin D levels. In adults with normal vitamin D levels, supplements have no effect on fracture risk.
The largest randomized controlled trial of vitamin D, called VITAL, investigated the effects of vitamin D supplementation in people without an existing deficiency. The study found that vitamin D supplements had no effects on the risk of cancer, diabetes, or cardiovascular disease, including heart attack and stroke. The study concluded that more research is necessary to determine who may benefit from vitamin D supplements.
Independent analyses found that vitamin D supplementation may be associated with a long-term decrease in cancer mortality, but results are mixed and also require more investigation.
A 2021 analysis of past vitamin D trials found no overall health benefits from vitamin D supplements in people with normal vitamin D levels. Most large-scale studies have found no link between vitamin D supplements and lower all-cause mortality (deaths from any cause), except in older adults and those with vitamin D deficiency.
Vitamin D provides modest protection against respiratory infections
Vitamin D is important for immune function, but this is often misconstrued as vitamin D “boosting” the immune system.
Some people falsely believe that taking vitamin D supplements will keep them healthy and prevent infections like the flu or COVID-19. In reality, clinical trials and large-scale studies of vitamin D have found only minimal protective effects against respiratory infections.
A 2021 analysis of 46 trials found that 61.3 percent of participants who took daily vitamin D supplements got respiratory infections during the study periods—compared to 62.3 percent of people who did not take the supplements. A 2024 meta-analysis of 43 trials found no overall protective effect against respiratory infections, but it detected a slight decrease in risk among people who took specific doses daily.
In young children, there is some evidence that vitamin D supplementation may reduce the length of respiratory infections. However, it does not affect the number or severity of infections that children have.
Despite claims that taking vitamin D can protect against COVID-19, two clinical trials found that taking daily vitamin D supplements did not reduce the risk or severity of COVID-19 infections, even at high doses.
Context is key when considering vitamin D’s benefits
None of these studies contradict the well-established evidence that people with vitamin D deficiency benefit from vitamin D supplements. But it’s important to remember that many of the most popular health claims about vitamin D’s benefits are based on research in people with vitamin D deficiency.
Research in vitamin D-deficient populations is important, but it tells us little about how vitamin D will affect people with normal or close to normal vitamin D levels. A closer look at vitamin D research in people without low levels reveals little evidence to support the idea that the general population benefits from taking vitamin D supplements.

Dr. Porges’ work on this topic is, by the way, the culmination of 40 years of research. While he’s not exactly a household name to the layperson, he’s very respected in his field, and this book is his magnum opus.
Here he explains the disparate roles of the two branches of the vagus nerve (hence: polyvagal theory). At least, the two branches that we mammals have; non-mammalian vertebrates have only one. This makes a big difference, because of the cascade of inhibitions that this allows.
The answer to the very general question “What stops you from…?” is usually found somewhere down this line of cascade of inhibitions.
These range from “what stops you from quitting your job/relationship/etc” to “what stops you from freaking out” to “what stops you from relaxing” to “what stops you from reacting quickly” to “what stop you from giving up” to “what stops you from gnawing your arm off” and many many more.
And because sometimes we wish we could do something that we can’t, or wish we wouldn’t do something that we do, understanding this process can be something of a cheat code to life.
A quick note on style: the book is quite dense and can be quite technical, but should be comprehensible to any layperson who is content to take their time, because everything is explained as we go along.
Bottom line: if you’d like to better understand the mysteries of how you feel vs how you actually are, and what that means for what you can or cannot wilfully do, this is a top-tier book

Black Forest Chia Pudding

This pudding tastes so decadent, it’s hard to believe it’s so healthy, but it is! Not only is it delicious, it’s also packed with nutrients including protein, carbohydrates, healthy fats (including omega-3s), fiber, vitamins, minerals, and assorted antioxidant polyphenols. Perfect dessert or breakfast!
You will need
- 1½ cups pitted fresh or thawed-from-frozen cherries
- ½ cup mashed banana
- 3 tbsp unsweetened cocoa powder
- 2 tbsp chia seeds, ground
- Optional: 2 pitted dates, soaked in hot water for 10 minutes and then drained (include these if you prefer a sweeter pudding)
- Garnish: a few almonds, and/or berries, and/or cherries and/or cacao nibs
Method
(we suggest you read everything at least once before doing anything)
1) Blend the ingredients except for the chia seeds and the garnish, with ½ cup of water, until completely smooth
2) Divide into two small bowls or glass jars
3) Add 1 tbsp ground chia seeds to each, and stir until evenly distributed
4) Add the garnish and refrigerate overnight or at least for some hours. There’s plenty of wiggle-room here, so make it at your convenience and serve at your leisure.

Tinnitus: Quieting The Unwanted Orchestra In Your Ears

Tinnitus—When a “minor” symptom becomes disruptive
Tinnitus (typically: ringing in the ears) is often thought of less as a condition in and of itself, and more a symptom related to other hearing-related conditions. Paradoxically, it can be associated with hearing loss as well as with hyperacusis (hearing supersensitivity, which sounds like a superpower, but can be quite a problem too).
More than just ringing
Tinnitus can manifest not just as ringing, but also as whistling, hissing, pulsing, buzzing, hooting, and more.
For those who don’t suffer from this, it can seem very trivial; for those who do… Sometimes it can seem trivial too!
But sometimes it’s hard to carry on a conversation when at random moments it suddenly sounds like someone is playing a slide-whistle directly into your earhole, or like maybe a fly got stuck in there.
It’s distracting, to say the least.
What causes it?
First let’s note, tinnitus can be acute or chronic. So, some of these things may just cause tinnitus for a while, whereas some may give you tinnitus for life. In some cases, it depends on how long the thing in question persisted for.
A lot of things can cause it, but common causes include:
- Noise exposure (e.g. concerts, some kinds of industrial work, war)
- High blood pressure
- Head/neck injuries
- Ear infection
- Autoimmune diseases (e.g. Type 1 Diabetes, Lupus, Multiple Sclerosis)
So what can be done about it?
Different remedies will work (or not) for different people, depending on the cause and type of tinnitus.
Be warned also: some things that will work for one person’s tinnitus will make another person’s worse, so you might need to try a degree of experimentation and some of it might not be fun!
That in mind, here are some things you might want to try if you haven’t already:
- Earplugs or noise-canceling headphones—while tinnitus is an internal sound, not external, it often has to do with some part(s) of your ears being unduly sensitive, so giving them less stimulus may ease the tinnitus that occurs in reaction to external noise.
- A great option (that this writer uses personally and considers a life-changer) is silicon earplugs that live in a little case on a keyring when not in use—no more heart-racing fleeing from supermarket checkout boops or pedestrian crossing bips or traffic noises or babies crying or (etc)
- White noise—if you also have hyperacusis, a lower frequency range will probably not hurt the way a higher range might. If you don’t also have hyperacusis, you have more options here and this is a popular remedy. Either way, white noise outperforms “relaxing” soundscapes.
- Hearing aids—counterintuitively, for some people whose tinnitus has developed in response to hearing loss, hearing aids can help bring things “back to normal” and eliminate tinnitus in the process.
- Customized sound machines—if you have the resources to get fancy, science currently finds this to be best of all. They work like white noise, but are tailored to your specific tinnitus.
