If you’ve been thinking “I should get into kombucha”, then this is the universe prompting you, because with in this book’s 400 pages is all the information you need and more.
Because, it’s understandable to be wary when starting out, from “what if my jar explodes” to “what if I poison my family”, but the authors (and photographer) take every care to ensure that everything goes perfectly, guiding us through everything from start to finish, including very many high-quality color photos of what things should (and shouldn’t) look like.
On which note, that does mean that to enjoy the color you should get a physical copy or Kindle Fire, not a Kindle e-ink version (as then it’d be black and white).
There’s also a comprehensive section on troubleshooting, as well as hundreds of recipes for all kinds of flavors and occasions.
Bottom line: in the category of books that could reasonably be called “The Bible of…”, this one’s the “The Bible of Kombucha”.

Glutathione: More Than An Antioxidant

Glutathione’s Benefits: The Usual And The Unique
Glutathione is a powerful antioxidant that does all the things we might reasonably expect an antioxidant to do, plus some beneficial quirks of its own.
We do make glutathione in our bodies, but we can also get it from our diet, and of course, we can also supplement it.
What foods is it in?
It’s in a lot of foods, but some top examples include:
- turmeric
- avocado
- asparagus
- almonds
- cruciferous vegetables
- watermelon
- garlic

What does it do?
Let’s start with the obvious; as with most things that are antioxidant, it is also anti-inflammatory. Increasing or decreasing glutathione levels is associated with decreased or increased inflammation, respectively. For example:
It being anti-inflammatory also means it can be beneficial in calming autoimmune disorders:

And to complete the triad of “those three things that generally go together”, yes, this means it also has anticancer potential, but watch out!

So in other words, when it comes to cancer risk management, glutathione is a great preventative, but the opposite of a cure.
What were those “beneficial quirks of its own”?
They are mainly twofold, and the first is that it improves insulin sensitivity. There are many studies showing this, but here’s a recent one from earlier this year:

The other main “beneficial quirk of its own” is that it helps prevent and/or reverse non-alcoholic fatty liver disease, as in this study from last year:
Because of glutathione’s presence in nuts, fruits, and vegetables, this makes it a great thing to work in tandem with a dietary approach to preventing/reversing NAFLD, by the way:
Anything else?
It’s being investigated as a potential treatment for Parkinson’s disease symptoms, but the science is young for this one, so there is no definitive recommendation yet in this case. If you’re interested in that, though, do check out the current state of the science at:

Is it safe?
While there is no 100% blanket statement of safety that can ever be made about anything (even water can kill people, and oxygen ultimately kills everyone that something else doesn’t get first), glutathione has one of the safest general safety profiles possible, with the exception we noted earlier (if you have cancer, it is probably better to skip this one unless an oncologist or similar advises you otherwise).
As ever, do speak with your doctor/pharmacist to be sure in any case, though!

3 Day Juice Fasting? Not So Fast!

Juice fasts are trending… Again. They have been before, and this will probably not be the last time either.
The rationale is that by having nothing but fruit and/or vegetable juice for a few days, the body can clear itself of toxins while it’s not being preoccupied by dealing with what you’re eating on a daily basis.
This is not bad in theory, and in fact is a sort of parallel to the actually good advice to help the liver regenerate—by abstaining from things that the liver has to do hard work about, it has more internal resources to devote to taking care of itself.

Just one problem
By having only juice for a few days, you are doing the opposite of what the liver needs.
In fact, by giving it what’s basically straight sugars in water with no fiber and not even any fats to slow it down, you are making your liver work overtime to deal with the flood of sugars, and it will not cope well.
Indeed, processed carbs without sufficient fiber are one of the main drivers of non-alcoholic fatty liver disease.
And yes, that’s what juice is: processed carbs without fiber

Here be (more) science
A three-day interventional study was performed on juicing and microbiome health, with three groups:
- Juice only
- Juice with whole foods
- Only whole plant-based foods
The results?
- Juice only: biggest growth in bacteria that cause inflammation and gut permeability (that’s bad; very bad)
- Juice with whole foods: the same bad effects, but much less pronounced than the juice-only group
- Only whole plant-based food: notable improvements in the microbiome
That’s what the changes were immediately post-intervention; what’s interesting to note is that the bad effects of the juice-only group also lingered longer, whereas the juice+food group enjoyed a relatively quicker recovery in the two weeks after the intervention.

Wholesome Threesome Protein Soup

This soup has two protein– and fiber-rich pseudo-grains, one real wholegrain, and nutrient-dense cashews for yet even more protein, and all of the above are full of many great vitamins and minerals. All in all, a well-balanced and highly-nutritious light meal!
You will need
- ⅓ cup quinoa
- ⅓ cup green lentils
- ⅓ cup wholegrain rice
- 5 cups low-sodium vegetable stock (ideally you made this yourself from offcuts of vegetables, but failing that, low-sodium stock cubes can be bought in most large supermarkets)
- ¼ cup cashews
- 1 tbsp dried thyme
- 1 tbsp black pepper, coarse ground
- ½ tsp MSG or 1 tsp low-sodium salt
Optional topping:
- ⅓ cup pine nuts
- ⅓ cup finely chopped fresh mint leaves
- 2 tbsp coconut oil
Method
(we suggest you read everything at least once before doing anything)
1) Rinse the quinoa, lentils, and rice.
2) Boil 4 cups of the stock and add the grains and seasonings (MSG/salt, pepper, thyme); simmer for about 25 minutes.
3) Blend the cashews with the other cup of vegetable stock, until smooth. Add the cashew mixture to the soup, stirring it in, and allow to simmer for another 5 minutes.
4) Heat the coconut oil in a skillet and add the pine nuts, stirring until they are golden brown.
5) Serve the soup into bowls, adding the mint and pine nuts to each.

Viruses aren’t always harmful. 6 ways they’re used in health care and pest control

We tend to just think of viruses in terms of their damaging impacts on human health and lives. The 1918 flu pandemic killed around 50 million people. Smallpox claimed 30% of those who caught it, and survivors were often scarred and blinded. More recently, we’re all too familiar with the health and economic impacts of COVID.
But viruses can also be used to benefit human health, agriculture and the environment.
Viruses are comparatively simple in structure, consisting of a piece of genetic material (RNA or DNA) enclosed in a protein coat (the capsid). Some also have an outer envelope.
Viruses get into your cells and use your cell machinery to copy themselves.
Here are six ways we’ve harnessed this for health care and pest control.1. To correct genes
Viruses are used in some gene therapies to correct malfunctioning genes. Genes are DNA sequences that code for a particular protein required for cell function.
If we remove viral genetic material from the capsid (protein coat) we can use the space to transport a “cargo” into cells. These modified viruses are called “viral vectors”.
Viruses consist of a piece of RNA or DNA enclosed in a protein coat called the capsid.
DEXiViral vectors can deliver a functional gene into someone with a genetic disorder whose own gene is not working properly.
Some genetic diseases treated this way include haemophilia, sickle cell disease and beta thalassaemia.
2. Treat cancer
Viral vectors can be used to treat cancer.
Healthy people have p53, a tumour-suppressor gene. About half of cancers are associated with the loss of p53.
Replacing the damaged p53 gene using a viral vector stops the cancerous cell from replicating and tells it to suicide (apoptosis).
Viral vectors can also be used to deliver an inactive drug to a tumour, where it is then activated to kill the tumour cell.
This targeted therapy reduces the side effects otherwise seen with cytotoxic (cell-killing) drugs.
We can also use oncolytic (cancer cell-destroying) viruses to treat some types of cancer.
Tumour cells have often lost their antiviral defences. In the case of melanoma, a modified herpes simplex virus can kill rapidly dividing melanoma cells while largely leaving non-tumour cells alone.
3. Create immune responses
Viral vectors can create a protective immune response to a particular viral antigen.
One COVID vaccine uses a modified chimp adenovirus (adenoviruses cause the common cold in humans) to transport RNA coding for the SARS-CoV-2 spike protein into human cells.
The RNA is then used to make spike protein copies, which stimulate our immune cells to replicate and “remember” the spike protein.
Then, when you are exposed to SARS-CoV-2 for real, your immune system can churn out lots of antibodies and virus-killing cells very quickly to prevent or reduce the severity of infection.
4. Act as vaccines
Viruses can be modified to act directly as vaccines themselves in several ways.
We can weaken a virus (for an attenuated virus vaccine) so it doesn’t cause infection in a healthy host but can still replicate to stimulate the immune response. The chickenpox vaccine works like this.
The Salk vaccine for polio uses a whole virus that has been inactivated (so it can’t cause disease).
Others use a small part of the virus such as a capsid protein to stimulate an immune response (subunit vaccines).
An mRNA vaccine packages up viral RNA for a specific protein that will stimulate an immune response.
5. Kill bacteria
Viruses can – in limited situations in Australia – be used to treat antibiotic-resistant bacterial infections.
Bacteriophages are viruses that kill bacteria. Each type of phage usually infects a particular species of bacteria.
Unlike antibiotics – which often kill “good” bacteria along with the disease-causing ones – phage therapy leaves your normal flora (useful microbes) intact.

Shutterstock6. Target plant, fungal or animal pests
Viruses can be species-specific (infecting one species only) and even cell-specific (infecting one type of cell only).
This occurs because the proteins viruses use to attach to cells have a shape that binds to a specific type of cell receptor or molecule, like a specific key fits a lock.
The virus can enter the cells of all species with this receptor/molecule. For example, rabies virus can infect all mammals because we share the right receptor, and mammals have other characteristics that allow infection to occur whereas other non-mammal species don’t.
When the receptor is only found on one cell type, then the virus will infect that cell type, which may only be found in one or a limited number of species. Hepatitis B virus successfully infects liver cells primarily in humans and chimps.
We can use that property of specificity to target invasive plant species (reducing the need for chemical herbicides) and pest insects (reducing the need for chemical insecticides). Baculoviruses, for example, are used to control caterpillars.
Similarly, bacteriophages can be used to control bacterial tomato and grapevine diseases.
Other viruses reduce plant damage from fungal pests.
Myxoma virus and calicivirus reduce rabbit populations and their environmental impacts and improve agricultural production.
Just like humans can be protected against by vaccination, plants can be “immunised” against a disease-causing virus by being exposed to a milder version.

Oven-Roasted Ratatouille

This is a supremely low-effort, high-yield dish. It’s a nutritional tour-de-force, and very pleasing to the tastebuds too. We use flageolet beans in this recipe; they are small immature kidney beans. If they’re not available, using kidney beans or really any other legume is fine.
You will need
- 2 large zucchini, sliced
- 2 red peppers, sliced
- 1 large eggplant, sliced and cut into semicircles
- 1 red onion, thinly sliced
- 2 cans chopped tomatoes
- 2 cans flageolet beans, drained and rinsed (or 2 cups same, cooked, drained, and rinsed)
- ½ bulb garlic, crushed
- 2 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- 1 tbsp black pepper, coarse ground
- 1 tbsp nutritional yeast
- 1 tbsp red chili pepper flakes (omit or adjust per your heat preferences)
- ½ tsp MSG or 1 tsp low-sodium salt
- Mixed herbs, per your preference. It’s hard to go wrong with this one, but we suggest leaning towards either basil and oregano or rosemary and thyme. We also suggest having some finely chopped to go into the dish, and some held back to go on the dish as a garnish.
Method
(we suggest you read everything at least once before doing anything)
1) Preheat the oven to 350℉ / 180℃.
2) Mix all the ingredients (except the tomatoes and herbs) in a big mixing bowl, ensuring even distribution.
2) Add the tomatoes. The reason we didn’t add these before is because it would interfere with the oil being distributed evenly across the vegetables.
3) Transfer to a deep-walled oven tray or an ovenproof dish, and roast for 30 minutes.
4) Stir, add the chopped herbs, stir again, and return to the oven for another 30 minutes.
5) Serve (hot or cold), adding any herb garnish you wish to use.

Managing Jealousy

Jealousy is often thought of as a young people’s affliction, but it can affect us at any age—whether we are the one being jealous, or perhaps a partner.
And, the “green-eyed monster” can really ruin a lot of things; relationships, friendships, general happiness, physical health even (per stress and anxiety and bad sleep), and more.
The thing is, jealousy looks like one thing, but is actually mostly another.
Jealousy is a Scooby-Doo villain
That is to say: we can unmask it and see what much less threatening thing is underneath. Which is usually nothing more nor less than: insecurities
- Insecurity about losing one’s partner
- Insecurity about not being good enough
- Insecurity about looking bad socially
…etc. The latter, by the way, is usually the case when one’s partner is socially considered to be giving cause for jealousy, but the primary concern is not actually relational loss or any kind of infidelity, but rather, looking like one cannot keep one’s partner’s full attention romantically/sexually. This drives a lot of people to act on jealousy for the sake of appearances, in situations where they might otherwise, if they didn’t feel like they’d be adversely judged for it, be considerably more chill.
Thus, while monogamy certainly has its fine merits, there can also be a kind of “toxic monogamy” at hand, where a relationship becomes unhealthy because one partner is just trying to live up to social expectations of keeping the other partner in check.
This, by the way, is something that people in polyamorous and/or open relationships typically handle quite neatly, even if a lot of the following still applies. But today, we’re making the statistically safe assumption of a monogamous relationship, and talking about that!
How to deal with the social aspect
If you sit down with your partner and work out in advance the acceptable parameters of your relationship, you’ll be ahead of most people already. For example…
- What counts as cheating? Is it all and any sex acts with all and any people? If not, where’s the line?
- What about kissing? What about touching other body parts? If there are boundaries that are important to you, talk about them. Nothing is “too obvious” because it’s astonishing how many times it will happen that later someone says (in good faith or not), “but I thought…”
- What about being seen in various states of undress? Or seeing other people in various states of undress?
- Is meaningless flirting between friends ok, and if so, how do we draw the line with regard to what is meaningless? And how are we defining flirting, for that matter? Talk about it and ensure you are both on the same page.
- If a third party is possibly making moves on one of us under the guise of “just being friendly”, where and how do we draw the line between friendliness and romantic/sexual advances? What’s the difference between a lunch date with a friend and a romantic meal out for two, and how can we define the difference in a way that doesn’t rely on subjective “well I didn’t think it was romantic”?
If all this seems like a lot of work, please bear in mind, it’s a lot more fun to cover this cheerfully as a fun couple exercise in advance, than it is to argue about it after the fact!

How to deal with the more intrinsic insecurities
For example, when jealousy is a sign of a partner fearing not being good enough, not measuring up, or perhaps even losing their partner.
The key here might not shock you: communication
Specifically, reassurance. But critically, the correct reassurance!
A partner who is jealous will often seek the wrong reassurance, for example wanting to read their partner’s messages on their phone, or things like that. And while a natural desire when experiencing jealousy, it’s not actually helpful. Because while incriminating messages could confirm infidelity, it’s impossible to prove a negative, and if nothing incriminating is found, the jealous partner can just go on fearing the worst regardless. After all, their partner could have a burner phone somewhere, or a hidden app for cheating, or something else like that. So, no reassurance can ever be given/gained by such requests (which can also become unpleasantly controlling, which hopefully nobody wants).
A quick note on “if you have nothing to fear, you have nothing to hide”: rhetorically that works, but practically it doesn’t.
Writer’s example: when my late partner and I formalized our relationship, we discussed boundaries, and I expressed “so far as I am concerned, I have no secrets from you, except secrets that are not mine to share. For example, if someone has confided in me and asked that I not share it, I won’t. Aside from that, you have access-all-areas in my life; me being yours has its privileges” and this policy itself would already pre-empt any desire to read my messages.
Now indeed, I had nothing to hide. I am by character devoted to a fault. But my friends may well sometimes have things they don’t want me to share, which made that a necessary boundary to highlight (which my partner, an absolute angel by the way and not prone to unhealthy manifestations of jealousy in any case, understood completely).
So, it is best if the partner of a jealous person can explain the above principles as necessary, and offer the correct reassurance instead. Which could be any number of things, but for example:
- I am yours, and nobody else has a chance
- I fully intend to stay with you for life
- You are the best partner I have ever had
- Being with you makes my life so much better
…etc. Note that none of these are “you don’t have to worry about so-and-so”, or “I am not cheating on you”, etc, because it’s about yours and your partner’s relationship. If they ask for reassurances with regard to other people or activities, by all means state them as appropriate, but try to keep the focus on you two.
And if your partner (or you, if it’s you who’s jealous) can express the insecurity in the format…
“I’m afraid of _____ because _____”
…then the “because” will allow for much more specific reassurance. We all have insecurities, we all have reasons we might fear not being good enough for our partner, or losing their affection, and the best thing we can do is choose to trust our partners at least enough to discuss those fears openly with each other.

What about if the insecurity is based in something demonstrably correct?
By this we mean, something like a prior history of cheating, or other reasons for trust issues. In such a case, the jealous partner may well have a reason for their jealousy that isn’t based on a personal insecurity.
In our previous article about boundaries, we talked about relationships (romantic or otherwise) having a “price of entry”. In this case, you each have a “price of entry”:
- The “price of entry” to being with the person who has previously cheated (or similar), is being able to accept that.
- And for the person who cheated (or similar), very likely their partner will have the “price of entry” of “don’t do that again, and also meanwhile accept in good grace that I might be jittery about it”.
And, if the betrayal of trust was something that happened between the current partners in the current relationship, most likely that was also traumatic for the person whose trust was betrayed. Many people in that situation find that trust can indeed be rebuilt, but slowly, and the pain itself may also need treatment (such as therapy and/or couples therapy specifically).
