When comparing eggplant to onion, we picked the eggplant.

Why?

It’s a fairly one-sided one today:

In terms of macros, eggplant has more fiber while onions have more carbs for the same protein, so on balance that’s a win for eggplant.

In the category of vitamins, eggplant has more of vitamins A, B2, B3, B5, B7, B9, E, and K, while onions have more of vitamins B1, B6, and C, yielding an 8:3 win to eggplant here.

Looking at minerals, eggplant has more copper, iron, magnesium, manganese, and potassium, while onions have more calcium, phosphorus, selenium, and zinc, making this round a more marginal 5:4 win for eggplant.

Adding up the sections makes for an overall win for eggplant, but by all means do enjoy either or both, as diversity is best!
