The main premise of this book is cooking…

  • With nutritious whole foods
  • Without salt, oil, sugar (“SOS”)

It additionally does it without animal products and without gluten, and (per “nutritious whole foods”), and, as the title suggests, avoiding anything that’s more than very minimally processed. Remember, for example, that if something is fermented, then that fermentation is a process, so the food has been processed—just, minimally.

This is a revised edition, and it’s been adjusted to, for example, strip some of the previous “no salt” low-sodium options (such as tamari with 233mg/tsp sodium, compared to salt’s 2,300mg/tsp sodium).

You may be wondering: what’s left? Tasty, well-seasoned, plant-based food, that leans towards the “comfort food” culinary niche.

Enough to sate the author, after her own battles with anorexia and obesity (in that order) and finally, after various hospital trips, getting her diet where it needed to be for the healthy lifestyle that she lives now, while still getting to eat such dishes as “Chef AJ’s Disappearing Lasagna” and peanut butter fudge truffles and 151 more.

Bottom line: if you want whole-food plant-based comfort-food cooking that’s healthy in general and especially heart-healthy, this book has plenty of that.

    Every second news article about body image issues is talking about teens and social media use, but science tells a different story.

    A large (n=1,327) study of people of mixed genders aged 16–88 examined matters relating to people’s body image, expecting…

    ❝We hypothesized that body dissatisfaction and importance of appearance would be higher in women than in men, that body dissatisfaction would remain stable across age in women, and that importance of appearance would be lower in older women compared to younger women. Body appreciation was predicted to be higher in men than in women.❞

    As they discovered, only half of that turned out to be true:

    ❝In line with our hypotheses, body dissatisfaction was higher in women than in men and was unaffected by age in women, and importance of appearance was higher in women than in men.

    However, only in men did age predict a lower level of the importance of appearance. Compared to men, women stated that they would invest more hours of their lives to achieve their ideal appearance.

    Contrary to our assumption, body appreciation improved and was higher in women across all ages than in men.❞

    That’s a lot of information, and we don’t have the space to go into all parts of it here, fascinating as that would be. So we’re going to put two pieces of information (from the above) next to each other:

    • body dissatisfaction was higher in women than in men and was unaffected by age in women
    • body appreciation improved and was higher in women across all ages than in men

    …and resolve this apparent paradox.

    Dissatisfied appreciation

    How is it that women are both more dissatisfied with, and yet also more appreciative of, their bodies?

    The answer is that we can have positive and negative feelings about the same thing, without them cancelling each other out. In short, simply, feeling more feelings about it.

    Whether the gender-related disparity in this case comes more from hormones or society could be vigorously debated, but chances are, it’s both. And, for our gentleman-readers, note that the principle still applies to you, even if scaled down on average.

    Call to action:

    • be aware of the negative feelings of body dissatisfaction
    • focus on the positive feelings of body appreciation

    While in theory both could motivate us to action, in reality, the former will tend to inform us (about what we might wish to change), while the latter will actually motivate us in a useful way (to do something positive about it).

    This is because the negative feelings about body image tend to be largely based in shame, and shame is a useless motivator (i.e., it simply doesn’t work) when it comes to taking positive actions:

    You can’t hate yourself into a body you love

    That may sound like a wishy-washy platitude, but given the evidence on how shame works (and doesn’t), it’s true.

    Instead, once you’ve identified the things about your body with which you’re dissatisfied, you can then assess:

    • what can reasonably be changed
    • whether it is important enough to you to change it
    • how to go about usefully changing it

    While weight issues are perhaps the most commonly-discussed body image consideration, to the point that often all others get forgotten, let’s look at something that’s generally more specific to adults, and also a very common cause of distress for women and men alike: hair loss/thinning.

    If your hair is just starting to thin and fall, then if this bothers you, there’s a lot that can be done about it quite easily, but (and this is important) you have to love yourself enough to actually do it. Merely feeling miserable about it, and perhaps like you don’t deserve better, or that it is somehow a personal failing on your part, will not help.

    If your hair has been gone for years, then chances are you’ve made your peace with this by now, and might not even take it back if a fairy godmother came along and offered to restore it magically. On the other hand, let’s say that you’re just coming out the other end of a 10-year-long depression, and perhaps you let a lot of things go that you now wish you hadn’t, and maybe your hair is one of them. In this case, now you need to decide whether getting implants (likely the only solution at this late stage) is worth it.

    Note that in both cases, whatever the starting point and whether the path ahead is easy or hard, the person who has dissatisfaction and/but still values themself and their body will get what they need.

    In contrast, the person who has dissatisfaction and does not value themself and their body, will languish.

    The person without dissatisfaction, of course, probably already has what they need.

    In short: identification of dissatisfaction + love and appreciation of oneself and one’s body → motivation to usefully take action (out of love, not hate)

    Now, dear reader, apply the same thinking to whatever body image issues you may have, and take it from there!

    Embodiment

    A quick note in closing: if you are a person with no body dissatisfactions, there are two main possible reasons:

    • You are genuinely happy with your body in all respects. Congratulations!
    • You have disassociated from your body to such an extent that it’s become a mere vehicle to you and you don’t care about it.

    This latter may seem like a Zen-level win, but in fact it’s a warning sign for depression, so please do examine that even if you don’t “feel” depressed (depression is often characterized by a lack of feelings), perhaps by taking the (very quick) free PHQ9 Test ← under 2 minutes; immediate results; industry-standard diagnostic tool

  • Oh, Honey

    The Bee’s Knees?

    If you’d like to pre-empt that runny nose, some say that local honey is the answer. The rationale is that bees visiting the local sources of pollen and making honey will introduce the same allergens to you in a non allergy-inducing fashion (the honey). The result? Inoculation against the allergens in question.

    But does it work?

    Researching this, we found a lot of articles saying there was no science to back it up.

    And then! We found one solitary study from 2013, and the title was promising:

    Ingestion of honey improves the symptoms of allergic rhinitis: evidence from a randomized placebo-controlled trial

    But we don’t stop at titles; that’s not the kind of newsletter we are. We pride ourselves on giving good information!

    And it turned out, upon reading the method and the results, that:

    • Both the control and test groups also took loratadine for the first 4 weeks of the study
    • The test group additionally took 1g/kg bodyweight of honey, daily—so for example if you’re 165lb (75kg), that’s about 4 tablespoons per day
    • The control group took the equivalent amount of honey-flavored syrup
    • Both groups showed equal improvements by week 4
    • The test group only showed continued improvements (over the control group) by week 8

    The researchers concluded from this:

    ❝Honey ingestion at a high dose improves the overall and individual symptoms of AR, and it could serve as a complementary therapy for AR.❞

    We at 10almonds concluded from this:

    ❝That’s a lot of honey to eat every day for months!❞

    We couldn’t base an article on one study from a decade ago, though! Fortunately, we found a veritable honeypot of more recent research, in the form of this systematic review:

    …which examines 13 key studies and 43 scientific papers over the course of 21 years. That’s more like it! This was the jumping-off point we needed into more useful knowledge.

    We’re not going to cite all those here—we’re a health and productivity newsletter, not an academic journal of pharmacology, but we did sift through them so that you don’t have to, and:

    The researchers (of that review) concluded:

    ❝Although there is limited evidence, some studies showed remarkable improvements against certain types of allergic illnesses and support that honey is an effective anti-allergic agent.

    Our (10almonds team) further observations included:

    • The research review notes that a lot of studies did not confirm which phytochemical compounds specifically are responsible for causing allergic reactions and/or alleviating such (so: didn’t always control for what we’d like to know, i.e. the mechanism of action)
    • Some studies showed results radically different from the rest. The reviewers put this down to differences that were not controlled-for between studies, for example:
      • Some studies used very different methods to others. There may be an important difference between a human eating a tablespoon of honey, and a rat having aerosolized honey shot up its nose, for instance. We put more weight to human studies than rat studies!
      • Some kinds of honey (such as manuka) contain higher quantities of gallic acid which itself can relieve allergies by chemically inhibiting the release of histamine. In other words, never mind pollen-based inoculations… it’s literally an antihistamine.
      • Certain honeys (such as tualang, manuka and gelam) contain higher quantities of quercetin. What’s quercetin? It’s a plant flavonoid that a recent study has shown significantly relieves symptoms of seasonal allergies. So again, it works, just not for the reason people say!

    In summary:

    The “inoculation by local honey” thing specifically may indeed remain “based on traditional use only” for now.

    But! Honey as a remedy for allergies, especially manuka honey, has a growing body of scientific evidence behind it.

    Bottom line:

    If you like honey, go for it (manuka seems best)! It may well relieve your symptoms.

    If you don’t, off-the-shelf antihistamines remain a perfectly respectable option.

  • Anti-Aging Risotto With Mushrooms, White Beans, & Kale

    This risotto is made with millet, which as well as being gluten-free, is high in resistant starch that’s great for both our gut and our blood sugars. Add the longevity-inducing ergothioneine in the shiitake and portobello mushrooms, as well as the well-balanced mix of macro- and micronutrients, polyphenols such as lutein (important against neurodegeneration) not to mention more beneficial phytochemicals in the seasonings, and we have a very anti-aging dish!

    You will need

    • 3 cups low-sodium vegetable stock
    • 3 cups chopped fresh kale, stems removed (put the removed stems in the freezer with the vegetable offcuts you keep for making low-sodium vegetable stock)
    • 2 cups thinly sliced baby portobello mushrooms
    • 1 cup thinly sliced shiitake mushroom caps
    • 1 cup millet, as yet uncooked
    • 1 can white beans, drained and rinsed (or 1 cup white beans, cooked, drained, and rinsed)
    • ½ cup finely chopped red onion
    • ½ bulb garlic, finely chopped
    • ¼ cup nutritional yeast
    • 1 tbsp balsamic vinegar
    • 2 tsp ground black pepper
    • 1 tsp white miso paste
    • ½ tsp MSG or 1 tsp low-sodium salt
    • Extra virgin olive oil

    Method

    (we suggest you read everything at least once before doing anything)

    1) Heat a little oil in a sauté or other pan suitable for both frying and volume-cooking. Fry the onion for about 5 minutes until soft, and then add the garlic, and cook for a further 1 minute, and then turn the heat down low.

    2) Add about ¼ cup of the vegetable stock, and stir in the miso paste and MSG/salt.

    3) Add the millet, followed by the rest of the vegetable stock. Cover and allow to simmer for 30 minutes, until all the liquid is absorbed and the millet is tender.

    4) Meanwhile, heat a little oil to a medium heat in a skillet, and cook the mushrooms (both kinds), until lightly browned and softened, which should only take a few minutes. Add the vinegar and gently toss to coat the mushrooms, before setting side.

    5) Remove the millet from the heat when it is done, and gently stir in the mushrooms, nutritional yeast, white beans, and kale. Cover, and let stand for 10 minutes (this will be sufficient to steam the kale in situ).

    6) Uncover and fluff the risotto with a fork, sprinkling in the black pepper as you do so.

    7) Serve. For a bonus for your tastebuds and blood sugars, drizzle with aged balsamic vinegar.

    KFF Health News Peggy Girshman reporting fellow Jackie Fortiér joined a boat tour to spotlight a review of microbes in the Anacostia River, a step toward making the river healthier and swimmable. The story was featured on WAMU’s “Health Hub” on Feb. 26.

    On a bright October day, high schoolers from Francis L. Cardozo Education Campus piled into a boat on the Anacostia River in Washington, D.C. Most had never been on the water before.

    Their guide, Trey Sherard of the Anacostia Riverkeeper, started the tour with a well-rehearsed safety talk. The nonprofit advocates for the protection of the river.

    A boy with tousled black hair casually dipped his fingers in the water.

    “Don’t touch it!” Sherard yelled.

    Why was Sherard being so stern? Was it dangerously cold? Were there biting fish?

    Because of the sewage.

    “We get less sewage than we used to. Sewage is a code word for what?” Sherard asked the teenagers.

    “Poop!” one student piped up.

    “Human poop,” Sherard said. “Notice I didn’t say we get none. I said we get what? Less.”

    Tours like this are designed to get young people interested in the river’s ecology, but it’s a fine line to tread — interacting with the water can make people sick. Because of the health risks, swimming hasn’t been legal in the Anacostia for more than half a century. The polluted water can cause gastrointestinal and respiratory illnesses, as well as eye, nose, and skin infections.

    The river is the cleanest it’s been in years, according to environmental experts, but they still advise you not to take a dip in the Anacostia — not yet, at least.

    About 40 million people in the U.S. live in a community with a combined sewer system, where wastewater and stormwater flow through the same pipes. When pipe capacities are reached after heavy rains, the overflow sends raw wastewater into the rivers instead of to a treatment plant.

    Federal regulations, including sections of the Clean Water Act, require municipalities such as Washington to reduce at least 85% of this pollution or face steep fines.

    To achieve compliance, Washington launched a $2.6 billion infrastructure project in 2011. DC Water’s Clean Rivers Project will eventually build multiple miles-long underground storage basins to capture stormwater and wastewater and pump it to treatment plants once heavy rains have subsided.

    The Anacostia tunnel is the first of these storage basins to be completed. It can collect 190 million gallons of bacteria-laden wastewater for later treatment, said Moussa Wone, vice president of the Clean Rivers Project.

    Climate change is causing more intense rainstorms in Washington, so even after construction is complete in 2030, Wone said, untreated stormwater will be discharged into the river, though much less frequently.

    “On the Anacostia, we’re going to be reducing the frequency of overflows from 82 to two in an average year,” Wone said.

    But while the Anacostia sewershed covers 176 square miles, he noted, only 17% is in Washington.

    “The other 83% is outside the district,” Wone said. “We can do our part, but everybody else has to do their part also.”

    Upstream in Maryland’s Montgomery and Prince George’s counties, miles of sewer lines are in the process of being upgraded to divert raw sewage to a treatment plant instead of the river.

    The data shows that poop is a problem for river health — but knowing what kind of poop it is matters. Scientists monitor E. coli to indicate the presence of feces in river water, but since the bacteria live in the guts of most warm-blooded animals, the source is difficult to determine.

    “Is it human feces? Or is it deer? Is it gulls’? Is it dogs’?” said Amy Sapkota, a professor of environmental and occupational health at the University of Maryland.

    Bacterial levels can fluctuate across the river even without rainstorms. An Anacostia Riverkeeper report found that in 2023 just three of nine sites sampled along the Washington portion of the watershed had consistently low E. coli levels throughout the summer season.

    Sapkota is heading a new bacterial monitoring program measuring the amount of E. coli that different animal species deposit along the river.

    The team uses microbial source tracking to analyze samples of river water taken from different locations each month by volunteers. The molecular approach enables scientists to target specific gene sequences associated with fecal bacteria and determine whether the bacteria come from humans or wildlife. Microbial source tracking also measures fecal pollution levels by source.

    “We can quantify the levels of different bacterial targets that may be coming from a human fecal source or an animal fecal source,” Sapkota said.

    Her team expects to have preliminary results this year.

    The health risk to humans from river water will never be zero, Sapkota said, but based on her team’s research, smart city planning and retooled infrastructure could lessen the level of harmful bacteria in the water.

    “Let’s say that we’re finding that actually there’s a lot of deer fecal signatures in our results,” Sapkota said. “Maybe this points to the fact that we need more green buffers along the river that can help prevent fecal contaminants from wildlife from entering the river during stormwater events.”

    Washington is hoping to recoup some of the cost of building green spaces and other river cleanup. In January, the office of D.C. Attorney General Brian Schwalb filed a lawsuit seeking unspecified damages from the federal government over decades of alleged pollution of the Anacostia River.

    Brenda Lee Richardson, coordinator of the Anacostia Parks & Community Collaborative, said the efforts to cut down on trash and sewage are paying off. She sees a river on the mend, with more plant and animal life sprouting up.

    “The ecosystem seems a lot greener,” she said. “There’s stuff in the river now that wasn’t there before.”

    But any changes to the waterfront need to be done with residents of both sides of the river in mind, she said.

    “We want there to be some sense of equity as it relates to who has access,” she said. “When I look at who is recreating, it’s not people who look like me.”

    Richardson has lived for 40 years in Ward 8 — a predominantly Black area on the east side of the river whose residents are generally less affluent than those on the west side. She and her neighbors don’t consider the Anacostia a place to get out and play, she said.

    As the water quality slowly improves, Richardson said, she hopes the Anacostia’s reputation is also rehabilitated. Even if it’s not safe to swim in, Richardson enjoys boating trips like the one with the Anacostia Riverkeeper.

    “To see all those creatures along the way and the greenery. It was comforting,” she said. “So rather than take a pill to settle my nerves, I can just go down the river.”

  • The Cold Truth About Respiratory Infections

    The Pathogens That Came In From The Cold

    Yesterday, we asked you about your climate-themed policy for avoiding respiratory infections, and got the above-depicted, below-described, set of answers:

    • About 46% of respondents said “Temperature has no bearing on infection risk”
    • About 31% of respondents said “It’s important to get plenty of cold, fresh air, as this kills/inactivates pathogens”
    • About 22% of respondents said “It’s important to stay warm to avoid getting colds, flu, etc”

    Some gave rationales, including…

    For “stay warm”:

    ❝Childhood lessons❞

    For “get cold, fresh air”:

    ❝I just feel that it’s healthy to get fresh air daily. Whether it kills germs, I don’t know❞

    For “temperature has no bearing”:

    ❝If climate issue affected respiratory infections, would people in the tropics suffer more than those in colder climates? Pollutants may affect respiratory infections, but I doubt just temperature would do so.❞

    So, what does the science say?

    It’s important to stay warm to avoid getting colds, flu, etc: True or False?

    False, simply. Cold weather does increase the infection risk, but for reasons that a hat and scarf won’t protect you from. More on this later, but for now, let’s lay to rest the idea that bodily chilling will promote infection by cold, flu, etc.

    In a small-ish but statistically significant study (n=180), it was found that…

    ❝There was no evidence that chilling caused any acute change in symptom scores❞

    Read more: Acute cooling of the feet and the onset of common cold symptoms

    Note: they do mention in their conclusion that chilling the feet “causes the onset of cold symptoms in about 10% of subjects who are chilled”, but the data does not support that conclusion, and the only clear indicator is that people who are more prone to colds generally, were more prone to getting a cold after a cold water footbath.

    In other words, people who were more prone to colds remained more prone to colds, just the same.

    It’s important to get plenty of cold, fresh air, as this kills/inactivates pathogens: True or False?

    Broadly False, though most pathogens do have an optimal operating temperature that (for obvious reasons) is around normal human body temperature.

    However, given that they don’t generally have to survive outside of a host body for long to get passed on, the fact that the pathogens may be a little sluggish in the great outdoors will not change the fact that they will be delighted by the climate in your respiratory tract as soon as you get back into the warm.

    With regard to the cold air not being a reliable killer/inactivator of pathogens, we call to the witness stand…

    Because pathogens like human body temperature, raising the body temperature is a way to kill/inactivate them: True or False?

    True! Unfortunately, it’s also a way to kill us. Because we, too, cannot survive for long above our normal body temperature.

    So, for example, bundling up warmly and cranking up the heating won’t necessarily help, because:

    • if the temperature is comfortable for you, it’s comfortable for the pathogen
    • if the temperature is dangerous to the pathogen, it’s dangerous to you too

    This is why the fever response evolved, and/but why many people with fevers die anyway. It’s the body’s way of playing chicken with the pathogen, challenging “guess which of us can survive this for longer!”

    Temperature has no bearing on infection risk: True or False?

    True and/or False, circumstantially. This one’s a little complex, but let’s break it down to the essentials.

    • Temperature has no direct effect, for the reasons we outlined above
    • Temperature is often related to humidity, which does have an effect
    • Temperature does tend to influence human behavior (more time spent in open spaces with good ventilation vs more time spent in closed quarters with poor ventilation and/or recycled air), which has an obvious effect on transmission rates

    The first one we covered, and the third one is self-evident, so let’s look at the second one:

    Temperature is often related to humidity, which does have an effect

    When the environmental temperature is warmer, water droplets in the air will tend to be bigger, and thus drop to the ground much more quickly.

    When the environmental temperature is colder, water droplets in the air will tend to be smaller, and thus stay in the air for longer (along with any pathogens those water droplets may be carrying).

    Some papers on the impact of this:

    So whatever temperature you like to keep your environment, humidity is a protective factor against respiratory infections, and dry air is a risk factor.

    So, for example:

    • If the weather doesn’t suit having good ventilation, a humidifier is a good option
    • Being in an airplane is one of the worst places to be for this, outside of a hospital

    A crock pot with hot water in and the lid off is also a very workable workaround too

  • Reasons to Stay Alive – by Matt Haig

    We’ve previously reviewed Matt Haig’s (excellent) The Comfort Book, and now it’s time for his more famous book: Reasons To Stay Alive. So, what’s this one, beyond the obvious?

    It narrates the experience of anxiety, depression, and suicidality, and discovering how to find beauty and joy in the world despite it all. It’s not that the author found a magical cure—he still experiences depression and anxiety (cannot speak for suicidality) but he knows now how to manage it, and live his life.

    You may be wondering: is this book instructional; is it reproducible, or is it just an autobiography? It’s centered around his own experience and learnings, but it gives a huge sense of not feeling alone, of having hope, and it gives a template for making sense of one’s own experience, even if every person will of course have some points of differences, the commonalities are nonetheless of immense value.

    The writing style is similar to The Comfort Book; it’s lots of small chapters, and all very easy-reading. Well, the subject matter is sometimes rather heavy, but the language is easy-reading! In other words, just the thing for when one is feeling easily overwhelmed, or not feeling up to reading a lot.

    Bottom line: whether or not you suffer with anxiety and/or depression, whether or not you sometimes feel suicidal, the contents of this book are important, valuable insights for everyone.
