Our Verdict

When comparing artichoke to spinach, we picked the spinach.

Why?

Nutritionally it scores best, though there is an important caveat to come…

In terms of macros, artichoke has more fiber, carbs, and protein, winning.

In the category of vitamins, artichoke has more of vitamins B3 and B5, while spinach has a lot more of vitamins A, B1, B2, B6, B7, B9, C, E, and K, winning easily here.

Looking at minerals, artichoke has more copper and phosphorus, while spinach has more calcium, iron, magnesium, manganese, potassium, selenium, and zinc, winning another round easily.

In other considerations, they’re both great for polyphenols, and/but, spinach is much higher in oxalates, which is generally considered a non-issue for most people, but if you have certain kidney disorders, you might want to avoid those, so it’s worth knowing. Recent research has also suggested oxalates may be an inflammatory trigger for others, though it may be possible this is offset by the polyphenols—the science on this latter hasn’t been done yet, so we certainly can’t say for sure.

In any case, adding up the sections makes for a clear overall win for spinach, but by all means enjoy either or both, unless you need to avoid oxalates, in which case, artichoke is on the menu for you!
