Bamboo Shoots vs Eggplant – Which is Healthier?

Our Verdict

When comparing bamboo to eggplant, we picked the bamboo.

Why?

In terms of macros, bamboo has 3x the protein while eggplant has slightly more fiber; we could call this round a tie quite respectably.

In the category of vitamins, bamboo has more of vitamins B1, B2, B6, C, and E, while eggplant has more of vitamins B5 and B9, giving bamboo a clear win in this round (especially as vitamin B5 is the one that’s plentiful in almost all foods, and therefore almost impossible to be deficient in unless literally starving to death).

Looking at minerals, bamboo has more calcium, copper, iron, manganese, phosphorus, potassium, selenium, and zinc, while eggplant boasts only more magnesium. Thus, a 7:1 win for bamboo here.

Adding up the sections makes for a clear overall win for bamboo, but by all means do enjoy either or both; diversity is best!
