When comparing eggplant to green beans, we picked the green beans.

Why?

It’s a simple one today:

In terms of macros, green beans have more protein and carbs for about the same fiber, making them the more nutrient-dense option in this category.

In the category of vitamins, eggplant has more of vitamins B3, B5, B6, and B9, while green beans have more of vitamins A, B1, B2, C, E, and K, winning again.
