Our Verdict
When comparing green beans to soybeans, we picked the soy.
Why?
It wasn’t close:
In terms of macros, green beans have 2x the fiber, while soybeans have 7x the protein (and they have about the same carbs). If the numbers were closer, we’d prioritize the fiber over the protein, but given the size of the difference, we say soy’s protein scores the win in this category.
In the category of vitamins, green beans have more of vitamins A, E, and K, while soybeans have more of vitamins B1, B2, B3, B5, B6, B7, B9, and C, winning a second round easily.
Looking at minerals, green beans are not higher in any mineral, while soybeans have more calcium, copper, iron, magnesium, manganese, phosphorus, potassium, and zinc, winning easily yet again.
Adding up the sections makes for a clear overall win for soy, but as ever, do by all means enjoy either or both, as diversity is best!
(Unless you have a soy allergy, in which case maybe don’t do that)
