Aging, Counterclockwise!
In the late 1970s, Dr. Ellen Langer hypothesized that physical markers of aging could be affected by psychosomatic means.
Note: psychosomatic does not mean “it’s all in your head”.
Psychosomatic means “your body does what your brain tells it to do, for better or for worse”
She set about testing that, in what has been referred to since as…
The Counterclockwise Study
A small (n=16) sample of men in their late 70s and early 80s were recruited in what they were told was a study about reminiscing.
Back in the 1970s, it was still standard practice in the field of psychology to outright lie to participants (who in those days were called “subjects”), so this slight obfuscation was a much smaller ethical aberration than in some famous studies of the same era and earlier (cough cough Zimbardo cough Milgram cough).
Anyway, the participants were treated to a week in a 1950s-themed retreat, specifically 1959, a date twenty years prior to the experiment’s date in 1979. The environment was decorated and furnished authentically to the date, down to the food and the available magazines and TV/radio shows; period-typical clothing was also provided, and so forth.
- The control group were told to spend the time reminiscing about 1959
- The experimental group were told to pretend (and maintain the pretense, for the duration) that it really was 1959
The results? On many measures of aging, the experimental group participants became quantifiably younger:
❝The experimental group showed greater improvement in joint flexibility, finger length (their arthritis diminished and they were able to straighten their fingers more), and manual dexterity.
On intelligence tests, 63 percent of the experimental group improved their scores, compared with only 44 percent of the control group. There were also improvements in height, weight, gait, and posture.
Finally, we asked people unaware of the study’s purpose to compare photos taken of the participants at the end of the week with those submitted at the beginning of the study. These objective observers judged that all of the experimental participants looked noticeably younger at the end of the study.❞
Remember, this was after one week.
Her famous study was completed in 1979, and/but not published until eleven years later in 1990, with the innocuous title:

We haven’t reviewed that particular book yet, so here’s Linda Graham’s review, that noted:
❝Langer cites other research that has made similar findings.
In one study, for instance, 650 people were surveyed about their attitudes on aging. Twenty years later, those with a positive attitude with regard to aging had lived seven years longer on average than those with a negative attitude to aging.
(By comparison, researchers estimate that we extend our lives by four years if we lower our blood pressure and reduce our cholesterol.)
In another study, participants read a list of negative words about aging; within 15 minutes, they were walking more slowly than they had before.❞

The Counterclockwise study has been repeated since, and/but we are still waiting for the latest (exciting, much larger sample, 90 participants this time) study to be published. The research proposal describes the method in great detail, and you can read that with one click over on PubMed:
It was approved, and has now been completed (as of 2020), but the results have not been published yet; you can see the timeline of how that’s progressing over on ClinicalTrials.gov:

Hopefully it’ll take less time than the eleven years it took for the original study, but in the meantime, there seems to be nothing to lose in doing a little “Citizen Science” for ourselves.
Maybe a week in a 20 years-ago themed resort (writer’s note: wow, that would only be 2004; that doesn’t feel right; it should surely be at least the 90s!) isn’t a viable option for you, but we’re willing to bet it’s possible to “microdose” on this method. Given that the original study lasted only a week, even just a themed date-night on a regular recurring basis seems like a great option to explore (if you’re not partnered then well, indulge yourself how best you see fit, in accord with the same premise; a date-night can be with yourself too!).
Just remember the most important take-away though:
Don’t accidentally put yourself in your own control group!
In other words, it’s critically important that for the duration of the exercise, you act and even think as though it is the appropriate date.
If you instead spend your time thinking “wow, I miss the [decade that does it for you]”, you will dodge the benefits, and potentially even make yourself feel (and thus, potentially, if the inverse hypothesis holds true, become) older.
This latter is not just our hypothesis by the way, there is an established potential for nocebo effect.
For example, the following study looked at how instructions given in clinical tests can be worded in a way that make people feel differently about their age, and impact the results of the mental and/or physical tests then administered:
❝Our results seem to suggest how manipulations by instructions appeared to be more largely used and capable of producing more clear performance variations on cognitive, memory, and physical tasks.
Age-related stereotypes showed potentially stronger effects when they are negative, implicit, and temporally closer to the test of performance. ❞
(and yes, that’s the same Dr. Francesco Pagnini whose name you saw atop the other study we cited above, with the 90 participants recreating the Counterclockwise study)

Feta Cheese vs Mozzarella – Which is Healthier?

Our Verdict
When comparing feta to mozzarella, we picked the mozzarella.
Why?
There are possible arguments for both, but there are a couple of factors that we think tip the balance.
In terms of macronutrients, feta has more fat, of which, more saturated fat, and more cholesterol. Meanwhile, mozzarella has about twice the protein, which is substantial for a cheese. So this section’s a fair win for mozzarella.
In the category of vitamins, however, feta wins with more of vitamins B1, B2, B3, B6, B9, B12, D, & E. In contrast, mozzarella boasts only a little more vitamin A and choline. An easy win for feta in this section.
When it comes to minerals, the matter is decided, we say. Mozzarella has more calcium, magnesium, phosphorus, and potassium, while feta has more copper, iron, and (which counts against it) sodium. A win for mozzarella.
About that sodium… A cup of mozzarella contains about 3% of the RDA of sodium, while a cup of feta contains about 120% of the RDA of sodium. You see the problem? So, while mozzarella was already winning based on adding up the previous categories, the sodium content alone is a reason to choose mozzarella for your salad rather than feta.
That settles it, but just before we close, we’ll mention that they do both have great gut-healthy properties, containing healthy probiotics.
In short: if it weren’t for the difference in sodium content, this would be a narrow win for mozzarella. As it is, however, it’s a clear win.

How Good Is Your Sleep, Really?
This is Dr. Marie-Pierre St-Onge, Director of Columbia University’s Center of Excellence for Sleep and Circadian Research.
The focus of Dr. St-Onge’s research is the study of the impact of lifestyle, especially sleep and diet, on cardio-metabolic risk factors.
She conducts clinical research combining her expertise on sleep, nutrition, and energy regulation.
What kind of things do her studies look at?
Her work focuses on questions about…
- The role of circadian rhythms (including sleep duration and timing)
- Meal timing and eating patterns
…and their impact on cardio-metabolic risk.
What does she want us to know?
First things first, when not to worry:
❝Getting a bad night’s sleep once in a while isn’t anything to worry about. That’s what we would describe as transient insomnia. Chronic insomnia occurs when you spend three months or more without regular sleep, and that is when I would start to be concerned.❞
But… as prevention is (as ever) better than cure, she also advises that we do pay attention to our sleep! And, as for how to do that…
The Six Dimensions of Sleep
One useful definition of overall sleep health is the RU-Sated framework, which assesses six key dimensions of sleep that have been consistently associated with better health outcomes. These are:
- regularity
- satisfaction with sleep
- alertness during waking hours
- timing of sleep
- efficiency of sleep
- duration of sleep
You’ll notice that some of these things you can only really know if you use a sleep-monitoring app. She does recommend the use of those, and so do we!

Based heavily in hard science, with more than 450 citations in over 300 pages, the exhortation is not just “trust me, lol”.
Instead, she encourages the reader to experiment. Not like “try this and see if it works”, but “here’s how to try this, using scientific method with good controls and good record-keeping”.
The book is divided into sections, each with a projection of time required at the start and a summary at the end. The reading style is easy-reading throughout, without sacrificing substance.
It proposes seven key interventions. If just one works for you, it’ll be worth having bought and read the book. More likely most if not all will… Because that’s how science works.

Hate salad or veggies? Just keep eating them. Here’s how our tastebuds adapt to what we eat

Do you hate salad? It’s OK if you do, there are plenty of foods in the world, and lots of different ways to prepare them.
But given almost all of us don’t eat enough vegetables, even though most of us (81%) know eating more vegetables is a simple way to improve our health, you might want to try.
If this idea makes you miserable, fear not, with time and a little effort you can make friends with salad.
Why don’t I like salads?
It’s an unfortunate quirk of evolution that vegetables are so good for us but they aren’t all immediately tasty to all of us. We have evolved to enjoy the sweet or umami (savoury) taste of higher energy foods, because starvation is a more immediate risk than long-term health.
Vegetables aren’t particularly high energy but they are jam-packed with dietary fibre, vitamins and minerals, and health-promoting compounds called bioactives.
Those bioactives are part of the reason vegetables taste bitter. Plant bioactives, also called phytonutrients, are made by plants to protect themselves against environmental stress and predators. The very things that make plant foods bitter, are the things that make them good for us.
Unfortunately, bitter taste evolved to protect us from poisons, and possibly from over-eating one single plant food. So in a way, plant foods can taste like poison.
For some of us, this bitter sensing is particularly acute, and for others it isn’t so bad. This is partly due to our genes. Humans have at least 25 different receptors that detect bitterness, and we each have our own genetic combinations. So some people really, really taste some bitter compounds while others can barely detect them.
This means we don’t all have the same starting point when it comes to interacting with salads and veggies. So be patient with yourself. But the steps toward learning to like salads and veggies are the same regardless of your starting point.
It takes time
We can train our tastes because our genes and our receptors aren’t the end of the story. Repeat exposures to bitter foods can help us adapt over time. Repeat exposures help our brain learn that bitter vegetables aren’t posions.
And as we change what we eat, the enzymes and other proteins in our saliva change too. This changes how different compounds in food are broken down and detected by our taste buds. How exactly this works isn’t clear, but it’s similar to other behavioural cognitive training.
Add masking ingredients
The good news is we can use lots of great strategies to mask the bitterness of vegetables, and this positively reinforces our taste training.
Salt and fat can reduce the perception of bitterness, so adding seasoning and dressing can help make salads taste better instantly. You are probably thinking, “but don’t we need to reduce our salt and fat intake?” – yes, but you will get more nutritional bang-for-buck by reducing those in discretionary foods like cakes, biscuits, chips and desserts, not by trying to avoid them with your vegetables.
Adding heat with chillies or pepper can also help by acting as a decoy to the bitterness. Adding fruits to salads adds sweetness and juiciness, this can help improve the overall flavour and texture balance, increasing enjoyment.
Pairing foods you are learning to like with foods you already like can also help.
The options for salads are almost endless, if you don’t like the standard garden salad you were raised on, that’s OK, keep experimenting.
Experimenting with texture (for example chopping vegetables smaller or chunkier) can also help in finding your salad loves.
Challenge your biases
Challenging your biases can also help the salad situation. A phenomenon called the “unhealthy-tasty intuition” makes us assume tasty foods aren’t good for us, and that healthy foods will taste bad. Shaking that assumption off can help you enjoy your vegetables more.
When researchers labelled vegetables with taste-focused labels, priming subjects for an enjoyable taste, they were more likely to enjoy them compared to when they were told how healthy they were.
The bottom line
Vegetables are good for us, but we need to be patient and kind with ourselves when we start trying to eat more.
Try working with biology and brain, and not against them.
And hold back from judging yourself or other people if they don’t like the salads you do. We are all on a different point of our taste-training journey.

You can thaw and refreeze meat: five food safety myths busted

This time of year, most fridges are stocked up with food and drinks to share with family and friends. Let’s not make ourselves and our guests sick by getting things wrong when preparing and serving food.
As the weather warms up, so does the environment for micro-organisms in foods, potentially allowing them to multiply faster to hazardous levels. So put the drinks on ice and keep the fridge for the food.
But what are some of those food safety myths we’ve long come to believe that aren’t actually true?
Myth 1: if you’ve defrosted frozen meat or chicken you can’t refreeze it
From a safety point of view, it is fine to refreeze defrosted meat or chicken or any frozen food as long as it was defrosted in a fridge running at 5°C or below. Some quality may be lost by defrosting then refreezing foods as the cells break down a little and the food can become slightly watery.
Another option is to cook the defrosted food and then divide into small portions and refreeze once it has stopped steaming. Steam in a closed container leads to condensation, which can result in pools of water forming. This, combined with the nutrients in the food, creates the perfect environment for microbial growth. So it’s always best to wait about 30 minutes before refrigerating or freezing hot food.
Plan ahead so food can be defrosted in the fridge, especially with large items such as a frozen turkey or roll of meat. If left on the bench, the external surface could be at room temperature and micro-organisms could be growing rapidly while the centre of the piece is still frozen!
Myth 2: Wash meat before you prepare and/or cook it
It is not a good idea to wash meats and poultry when preparing for cooking. Splashing water that might contain potentially hazardous bacteria around the kitchen can create more of a hazard if those bacteria are splashed onto ready-to-eat foods or food preparation surfaces.
It is, however, a good idea to wash fruits and vegetables before preparing and serving, especially if they’re grown near or in the ground as they may carry some dirt and therefore micro-organisms.
This applies particularly to foods that will be prepared and eaten without further cooking. Consuming foods raw that traditionally have been eaten cooked or otherwise processed to kill pathogenic micro-organisms (potentially deadly to humans) might increase the risk of food poisoning.
Fruit, salad, vegetables and other ready-to-eat foods should be prepared separately, away from raw meat, chicken, seafood and other foods that need cooking.
Myth 3: Hot food should be left out to cool completely before putting it in the fridge
It’s not OK to leave perishable food out for an extended time or overnight before putting it in the fridge.
Micro-organisms can grow rapidly in food at temperatures between 5° and 60°C. Temperature control is the simplest and most effective way of controlling the growth of bacteria. Perishable food should spend as little time as possible in the 5-60°C danger zone. If food is left in the danger zone, be aware it is potentially unsafe to eat.
Hot leftovers, and any other leftovers for that matter, should go into the fridge once they have stopped steaming to reduce condensation, within about 30 minutes.
Large portions of hot food will cool faster if broken down into smaller amounts in shallow containers. It is possible that hot food such as stews or soup left in a bulky container, say a two-litre mixing bowl (versus a shallow tray), in the fridge can take nearly 24 hours to cool to the safe zone of less than 5°C.
Myth 4: If it smells OK, then it’s OK to eat
This is definitely not always true. Spoilage bacteria, yeasts and moulds are the usual culprits for making food smell off or go slimy and these may not make you sick, although it is always advisable not to consume spoiled food.
Pathogenic bacteria can grow in food and not cause any obvious changes to the food, so the best option is to inhibit pathogen growth by refrigerating foods.
Myth 5: Oil preserves food so it can be left at room temperature
Adding oil to foods will not necessarily kill bugs lurking in your food. The opposite is true for many products in oil if anaerobic micro-organisms, such as Clostridium botulinum (botulism), are present in the food. A lack of oxygen provides perfect conditions for their growth.
Outbreaks of botulism arising from consumption of vegetables in oil – including garlic, olives, mushrooms, beans and hot peppers – have mostly been attributed to the products not being properly prepared.
Vegetables in oil can be made safely. In 1991, Australian regulations stipulated that this class of product (vegetables in oil) can be safely made if the pH (a measure of acid) is less than 4.6. Foods with a pH below 4.6 do not in general support the growth of food-poisoning bacteria including botulism.
